Bruschetta
Bruschetta is a delicious appetizer or snack served on rice crackers, tortilla chips or thinly sliced, toasted gluten-free bread.
You will need:
3 C diced fresh tomatoes,
1 C diced onion,
1 small bunch basil,
1 clove crushed garlic,
1 Tbs olive oil (or to taste),
1/2 tsp sea salt (or to taste),
1/4 tsp pepper (or to taste)

1. Assemble ingredients
2. Finely dice tomatoes and onions and chop basil.
3. Add all ingredients to a bowl.

4. Mix thoroughly.
5. Serve on gluten-free crackers or toasted bread.

To make your own gluten free toast squares
1. Cut sliced gluten-free bread into quarters
2. Broil on low setting for about 2 minutes each side.
3. Enjoy!
