Pumpkin Cookies
1 C canned pumpkin
2/3 C unsweetened shredded coconut
1/3 C agave
1/2 C unsweetened apple sauce
1 egg
1 1/3 C gluten-free flour
1/3 C tapioca starch
1/2 tsp xantham gum
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 tsp coconut milk
1 Tbs vanilla
Assemble ingredients. Preheat oven to 350. Blend all wet ingredients. Add all dry ingredients. Drop by rounded spoonfuls onto greased cookie sheet. Bake 10-12 minutes at 350.
